Cauliflower Pizza Base

Here is a ‘healthy’ gluten free vegetarian pizza recipe with a base made from cauliflower!  I got the recipe from the Real Foods website but I’ve adapted it to suit the ingredients I had to hand.

Base:

  • Florets of 1 cauliflower
  • Handful of pine nuts
  • Sprinkle of Chia Seeds (the new ‘it’ food, entirely optional!)
  • Handful of cheese (I used some cheddar I had in the fridge)
  • 2 Eggs

I boil the cauliflower for about 5 mins then blended them.  I wrapped them in a tea towel and squeezed out all the water. I mixed the cauliflower with all the other ingredients and spread the mixture on a baking tray.  I baked the base for about 10mins at 180C.

Toppings:

  • Tomato paste
  • 2 Tomatoes
  • Goat’s cheese
  • Red onion
  • Cheddar cheese

I fried the onion and chopped all the other ingredients.  I then spread the tomato paste on the base and arranged the other ingredients on the base. I then put it back in the oven for another 15mins.Cauliflower Pizza Base

It tasted a lot better than I anticipated!  The base had a mild cauliflower flavour but mainly the whole things tasted like cheese!  A success!  The base did not entirely hold together but I didn’t expect it to.
