For those of you who shun the raw vegan paleo shenanigans for whom spiralising is some awful way of replacing proper spaghetti with strings of courgette, I give you sweet potato curly fries. Ok, they’re a work in progress and they are designed to be healthier than normal fries but still they were quite yummy.
I used my Spiraliser (I can’t quite bring myself to spell it with a z, sorry Americans) to create lovely curly sweet potato strands. I pre-heated the over to 200 degree celsius. Then I covered then in sunflower oil (I put the sweet potato in a bowl, and poured in some oil then mixed it all up), and put them on a baking tray and put them in the oven.
The last time I had tied to make them I had cremated them so I was a little over cautious this time. I left them in for about 20mins but it wasn’t enough so I put them back in for another 10mins. Some of the little bits went quite crispy but the rest stayed soft, so maybe it needed even longer. I read somewhere that you need to pat the moisture out of them before cooking so that might help.
